Peanut Pork Tenderloin
One of our favorite dinners at home is peanut pork loin. It is very simple to put together, so we decided to try it on one of our extended RV trips. It turned out so well and was so easy that we had to pass it along.
One of the things we like about RVing is that it allows us to be on the road without having to eat out all the time. Sometimes a good meal at the campsite can provide a little taste of home.
Ingredients
- 1.5 lb. packaged pork loin. We use Hormel, but any brand will do.
- Baked potatoes
- Fresh green beans
- Your favorite peanut sauce. We use Leeann Chin Peanut Sauce.
- Crushed garlic
- Olive oil
- Butter
- Sliced almonds
- Soy sauce
Preparing the Pork
Start by slicing the pork loin into approximately 1 inch medallions. Cover the medallions with peanut sauce and let them marinate for at least an hour. We usually put them in the refrigerator and let them marinate all day.
You can cook the pork in the RV oven or on the grill.
Oven: Bake at 350°F for about 45 minutes, or until the pork reaches a safe internal temperature.
Grill: Double wrap the pork in foil and grill until done. On our grill, it usually takes about 25 minutes.
Potatoes
Bake or mash your potatoes, whichever way you like them best.
Green Beans
Sauté the fresh green beans in a little olive oil and butter. We add crushed garlic, sliced almonds, and a dash of soy sauce, but you can easily adjust them to suit your tastes.
That’s it. It’s a simple dinner that can be prepared at just about any campsite without spending half the evening cooking.
