Cooking Gear and Recipes

Here we hope to share some of our favorite meals while camping as well as others so please send us your favorites in the space below.  We will pass them on. 

Roasted Jo Jo's

This is a quick and simple way to do potatoes that taste good and surprisingly is good for you. You can prepare them in your RV oven or using your grill on those warm days.  


  • Preheat the oven to 400 or fire up the grill so its hot when you have them ready
  • Slice the Russets in spears.  One large one is enough for Pat and I, but do as many as you can eat.  They're good for you. 
  • Brush with egg whites 
  • Sprinkle with Paprika
  • Bake or put on the grill for 20 minutes
  • Season with Salt and Pepper to taste. 


Quick, simple, and healthy.  Enjoy.

Outdoor Cooking

Do you bring a chefs grill or a portable camping grill with you?   If your everyday job is that you are a chef, or every meal is a major event, then you probably are bringing along a very nice grill. More power to you.  


We enjoy cooking outside when we camp, weather permitting.  Space is limited in our RV storage and that is what is dictating the grill we have.  We tried one of the Coleman collapsible ones but didn't like it.  They tried making it a griddle grill but neither worked for our cooking. The size when folded was just to large for the space available in our storage bay.  We bought one the table top grills, we can grill enough food for ourselves and another couple at one time.  Which for us is just fine.  It runs off a propane bottle but I have an adapter that allows me to tap into the RV propane bottles for fuel.  Its easy to clean and cheap enough that its ok to replace every couple years.  


Next winter will be interesting as we plan on doing the snow bird thing somewhere in the south. With us being in one spot for an extended period I can see us wanting a larger one with an outside burner to do more of our cooking outside.

Peanuet Pork Loin

One of our favorite dinners at home is a peanut pork loin.  it is very simple to put together so we decided to try it on an extended RV trip.  Well, it is so simple we had to pass it on.  One of the things we like about RVing is it allows us to be on the road but not have to eat out all the time.  Meals can be a touch of home.  

Our Peanut Pork Loin Dinner

  • 1.5 lb Packaged Pork Loin. We use Hormel's but any brand will do
  • Baked Potato's 
  • Fresh Green Beans
  • Your favorite Peanut Sauce.  We use LeAnn Chins Peanut Sauce
  • Crushed Garlic


Start by slicing the pork loin into 1 inch medallions and covering with the peanut sauce for at least an hour.  We usually let them marinade in the fridge all day. 


You can bake them in our oven or cook them on the grill.  If you use the oven, cook for 45 minutes at 350.  To do them on the grill, double wrap them in foil and cook till done. On our grill it takes about 25 minutes. 


Bake or mash your potato's to the type you like best. 


Sautee your green beans in some olive oil and butter.  We add crushed garlic and sliced almonds with a dash of Soy Sauce but you can do them to meet your tastes.  


That's it.  This one can be done in an hour at any campsite.
